cruising the legend may 5 2005

hello all, need alittle help here. im booked on the legend for may 2005, can you book shore excursions ahead of time or can they only be done once you board the ship?? please inform me how to do this as we went on our first cruise and hurrican frances kept us from getting to our ports and we couldnt go snorkling, my wife and kids really want to do this. ncl had prebooked the excursions but i dont know how to do this with carnival. thanks
