I've read that an "all you can stuff in it" laundry bag offer is available for a reasonable price towards the end of the cruise... but do they return shirts and other items that require ironing ironed? If not, does anyone have an idea what they charge extra for ironing?

As I read the form, ironing is included within the washing price, although there is just an ironing price too.

the "fill the bag" special is washed and pressed. i don't know if that means folded or hanging. but pressed, yes.
