Any problems bringing a bottle of wine on Carnival? Also do it on RCC.

No problem at all. Carnival allows a bottle or two of "fine wine" to be brought aboard. You can enjoy it in your cabin, or take it to dinner, although they may/may not charge a $10 corkage fee in the dining room.
