Doing this on the ship will be expensive. One way to reduce the expense is to set the phone into 'airplane mode' (or disable WiFi) and set email to update manually. Then periodically activate the WiFi and open your email. Just remember to turn off WiFi as soon as your email is downloaded.

If you do not have a real pressing need to connect to email every day, try this trick I used on my recent Mexican Rivera cruise. Set your iPhone to automatically connect to any 'Linksys' or 'Cisco' network then leave WiFi on and email to automatically update when connected. Doing this will automatically connect you to any wireless network where the owners did not set up security and at this time your phone will check for email as you walk around town on shore days.

Another thing I did was check for wifi connections as I walked by hotels, restaurants and bars in town. Any time I went near a place that had free wifi, I would connect and check my email.
