How do I change signature?

Dave is letting his confuser get the better of him again - I can't remember how to edit my own signature block. Please help!

 

Please be very specific - I tend to get very stupid when I am doing something I should remember how to do, but don't. Must be the extra boat drinks I'm having while looking at CC.
