How do I book on-line via "Manage my reservation". Can't seem to find a link.

There isn't a link. There is usually a desk at check-in for the Speciality restaurants and you can book there or when you're onboard.

No one can pre book speciality dining, there will be a desk set up in the port before you board, and also a desk outside Windows Café at lunch.
