Is it possible to charter a sailboat for a day or less out of Bay of Islands? Our group of 8 has some avid sailors and this might be the best option for our port day there next January.

Can't help you with any specifics but your best bet would be to Google Bay of Islands Charter boats and then contact the various companies to see if a one day charter is possible.

From memory, and it's a very long time since I chartered a yacht there, most of the charter companies operate out of Opua, about 10 minutes drive away from Waitangi.
