Amsterdam is very easy to DIY because your ship docks in the city with only a short walk or tram ride to Centraal Station.

You can take the tram to Anne Frank House (get off at Westerkerk) or walk (make sure that you pre-book your AFH tickets online or you will waste a good deal of time in queue).

You can easily walk to the red light district or tram to Dam square & walk.

We visited the floating flower market - we walked. I don't know about whether or not you are allowed to take seeds aboard the ship but I do know that we (US nationals) are not allowed to bring seeds into the US.

I suggest you download a map of Amsterdam - it is a very walkable, lovely city. A little research pre-cruise will help you - lots of info is available online.

Check these maps.

http://www.amsterdam.info/print/map/

Cruiseterminal: B5

Beursplein B4 (no idea what you want to visit there.)

AF huis: B3

Red Light district: also on B5 - Oudezijdsburgwal etc.

Flowermarket: around Singel B4.

As you can see all is close together, even walkable.

You better check if it is allowed to bring seeds back to your home country. I donot think if it is a problem on the ship.

The ship will probably be no problem.

You do not mention your nationality. Like Ine already mentioned, if you are for example American or Australian, you will probably not be allowed to bring plant material back into your home country. At the flower market, however, you can buy special flower bulbs with health certificate.
