What to do in Huatulco and SanJuan del Sur, Nicaragua?

Hualtulco was very pretty with 7 bays, I think. It was not the rainy season so all the trees and growth on the hillsides were brown. We took a ship excursion to take photos and see the bays, stopped for tequila at a hotel and gift shop and then went into Santa Cruz and walked around a plaza, visiting a church and then had shrimp tacos and beer at a little cafe. There was a beach at the port and quite a few jewelry shops for silver and a marina with various boats in it. Very quiet place but not as quiet as Chiapas which was our first stop in Mexico/Guatemala border.

We are going to the same ports (Island Princess Christmas week). We'll probably do Huatulco on our own... it's a short stop and there appears enough within walking distance or a short cab ride. Nicaragua I understand we need a shore excursion but Princess has not yet published all the details. If you know of alternative shore excursions in the port, we might be interested.
