champagne choice

I'm no champagne expert, but if you are only going to do Mimosas, almost any sparkling wine should do. I find Korbel or Cooks to be just fine for drinking straight or with O.J.

The "Brut" variety will have less sugar than "Extra Dry" ... your choice there depends on your personal taste.

Brut = 0.7 - 1.1% sugar

Extra Dry = 1.2-2.0% sugar

You certainly do not need genuine Franch Champagne.

I'd stick with a sparkling wine, too, instead of actual champagne - Korbel or Freixenet.

I second the Freixenet. We buy that when we want a fairly decent sparkling wine for an ordinary occasion. But, when we really want to celebrate something we go with Moet White Star all the way!

Can't argue with that. That's my approach, too.
