Can't help with bartenders. it's been a few years. As far as excursions go we really enjoyed Dunn's River Falls/River Tubing with Phil Lafayette in Jamaica and the Stingray City tour with Nativeway in Grand Cayman

You'll love the Freedom. Khantee is the best waiter by far in the dining room. We also noticed last year we went on the Freedom in May and again in September and the bartenders rotated. I don't know if this means they also rotate from bartending to other positions altogether.

 

As far as excursions, we were into the all inclusive in Ports. I recommend Sandals in Jamacia and Passion Island in Cozumel. These include all your food and drinks and both are out of this world beautiful. We purchased both thru the cruiseline to be safe as far as getting back w/the ship not leaving us.
