In Grand Cayman I highly recommend Nativeway Watersports (http://www.nativewaywatersports.com) They were fantastic, lots of fun, very professional and half the proce of the ships tour. There were only 8 of us on our boat, versus dozens and dozens on the big ships tour, allowing for a much more relaxed and personalized trip. Our trip with them turned out to be the highlight of our trip!
