Remy tipping

of the $75/person up charge, how much goes to the server (if any)?

how much do you think a person should tip at Remy?

if none of the $75 fee goes to the server, then i would make the calculation based on the price of a meal at V&A, since they're comparable.

but if part of the $75 goes to the server, i'd like to know how much does.

We assumed nothing went to the servers and tipped as if we were eating at V&A's, and left $50. We also gave the sommelier an extra tip over and above the 15% tacked on to the cost of the bottle we bought, as we also brought a bottle and weren't sure how much of the corkage went to the sommelier.

It absolutely is and they have a decent selection by the glass. If you'll only have one glass, have Champagne, it's the only thing that goes with every type of food they might put in front of you. Otherwise, ask your server for a suggestion, but keep in mind it's probably only going to match a couple of the courses.

They start you with a Champagne cocktail, but we didn't care for it.

If you ever have a chance, try the Perrier-Jouet Champagne Cuvee Fleur De Champagne. (a/k/a "Perrier-Jouet in the flowered bottle"). It's probably my favorite of all the readily available Champagnes. Perfect balance.
