Question about Amex On Board Credits

I will be cruising w/ NCL in the future and wanted to know exactly what you can you use Amex credits for while sailing, i.e., I know that you cannot use them towards any kinds of tips. Can you use them toward, spa, store, etc.? excursions? Since I will have a sizeable amount of credits, I would like to any ideas on how to use them most effectively and creatively. Thanks.

From what I understand, anything except the daily service charge. Dinning, excursions, photos, drinks, gift shop . . . .
