Internet on Celebrity Eclipse

Sailing on Eclipse 11/27 - 12/10 while expecting an email at my home server some time during this period. Would I need to sign up for internet for the whole cruise or is there another way that i could know if the email had arrived?

Yes, they sell an "unlimited" package -- giving you access 24/7 during your whole cruise (keeping in mind that this is satellite coverage and there may be some times when the signal goes down, usually at that time of year with the ship in the Caribbean the outages are short-lived)
