And if one of the folks sitting at the table is allergic to shell fish they cook the shrimp and lobster in the back and then bring it out. I would prefer they cook the other persons meal in the back so the rest of the table is not inconvenienced.

Th reason is they are afraid if any residual on the cooking service. In the back it was in a separate pan(s).
