Vegatarian food?

We recently went on Discovery 2 and had a great time, so we are now looking at going on Explorer next year with some friends who are vegetarian.  We remember a few veggie options but to be honest we weren't really looking!  When we went with them on P&O they are given a separate vegetarian menu the day before.

Does anyone know if Marella offer any other options other than those on the menu in the main dining rooms??
