HDMI port access on Nieuw Amsterdam

With the new TVs post dry dock are the HDMI ports accessible if I wanted to hookup a laptop?

Nope!  TV's are fitted very close to the wall and even if you could wiggle your hand in to the location of the HDMI port you probably would not be able to get the connection made.

Also remote control unit in stateroom does not offer selection of input device.

It depends on the room. Some rooms to still have angled mounting that allows access. You will still need to bring a universal remote to switch inputs.
