I know that I am allowed to take 2 bottles champagne onboard when I embark - but am I allowed to buy  more champagne at ports that we visit?

Unfortunately No.  If they notice it they will take it from you and return it at the end of the cruise.

If you buy more you should expect for it to be taken from you and stored and returned to your cabin on the last night of the cruise.

As with all things it depends on how vigilant they are being!
