Nim Li Punit with lunch

First, I have not done this excursion.  That said, IMO, it's always better to take an excursion than stay at a port, especially one like Harvest Caye where they charge you $$$ for everything. The ruins at Nim Li Punit are interesting for their stelae, columns of writing from an important Mayan period.  A good guide would make this an educational experience.  Lunches on Mayan excursions in Belize generally focus on chicken rice and peas.  Nothing spectacular, but a traditional meal in Belize. There are ruins reviews on Trip Advisor and you'll probably see some on the NCL site.  As this is a distance from Harvest Caye and you need to take a ferry to the mainland, a ship sponsored excursion would be preferred.
