The easiest way probably would be to take the morning tour organised by Jameson Distillery from the cruise ship! https://www.jamesonwhiskey.com/en-EN/visit-us/jameson-distillery-midleton/jdm-our-home/jdm-plan-your-visit This is new for 2020 so I have no experience of it, but it seems like the simplest way to do it. Then when you are return to the ship at lunch time you can take the train to Cork. The train station is just beside the dock in Cobh. Tickets are from a machine (no ticket office), but you will have missed the initial rush by going to the distillery. Just be aware of the train times for your return in relation to All aboard time and the evening rush hour for commuters heading home to Cobh. There is also a bus from Cork https://www.corkcitytours.com/tours/jameson-experience-tickets/, which would entail you taking the train to Cork then taking the bus to the distillery and back to Cork.
