Why on earth should they withhold reservations because people were too lazy or uncertain to book in advance? First come, first serve...as with everything.  Why should this be any different? They deserve to be able to plan and fill the restaurant as certainly and early as possible. That's good management. 

well IMHO, this is where tip early and tip often can assist, TJ and UG are your friends.
