I have a return flight booked from Orlando to Ottawa with a stopover in New Jersey.  Will I need a Covid test done because I’m stopping in New Jersey prior to arriving in Canada? I know you don’t need one for Canada but just wondering about the stopover.

No need. There is no requirement for testing for domestic US flights.
