What did you visit in conjunction with Quito?

Other than venturing to Macchu Pichu, I'm wondering what other explorations you have added on to a trip to the Galapagos, which Celebrity routes through Quito for air transportation?

We cruised the Galapagos with Celebrity in 2016. This included the 2 nights precruise in Quito, however, we arrived 2 days earlier so we could do a bit of touring outside of Quito using a private guide. We booked our private tours with Lincoln Jabra, who we found via a recommendation from someone on Cruise Critic. Day 1 we visited the Saquisilí indigenous market and Cotapaxi. On day 2 we visited several sites in the Mindo Rain Forest. Lincoln adjusted several of our stops to accommodate our requests. We had a great time.
