Possibly.  Reservations have been open to book since Sept. 10 (for non-Haven and non-status passengers reservations open at 120 days pre-cruise), only a portion of reservations are made available pre-cruise.  You'll need to find the reservations table as soon as you board, try to board as early as possible, and see about getting the reservations you want.

They hold back a large number of reservations until embarkation.  They will have a place where you can go to make them once on board, or you can use the screens by the elevators or the TV in your cabin. Since cabins usually aren’t available for hours, doing it in person is probably best.

How many people are in your party?  If there is only one or two of you, you can go to Cagney's Hostess Desk on the night you  want to go and see if they have room.  It might take a few minutes to be seated if you go just as they are opening.

On our last cruise on Escape (3 weeks ago to Bermuda) they had 3 or 4 restaurant reservation kiosks set up in the Headliners Comedy Club (Deck 6, I think...).  Head right there as soon as you board.  I find the screens hit-and-miss; sometimes they work, sometimes not.

Have a great cruise!

Once you're checked in at the port and officially a passenger, can you connect to the ship wifi and use the app to make reservations?  Or will it be the same as doing it now.

Only once connected to the ship's WiFi will that work.  SOME have had success connecting from the terminal but it depends on the port..
