You don't necessarily need them, but they may be full if you are planning on going at a time that is generally more popular than others. You can make a reservation in the main atrium on embarkation day (they set up a reservations desk there). Or you can use your cabin phone. Since it's an included restaurant, it books up fairly fast. It requires reservations because it has fairly limited seating - it's actually part of the buffet, cordoned off every night and converted to La Trattoria.
