Their spruce tip syrup is wonderful, and I'm partial to the kelp pickles and kelp marmalade. My kids LOVE the salmonberry jams and jellies too... laughing husky Posted December 11, 2006 #9 Share Posted December 11, 2006 if you have a couple of birch trees on your property, you can tap your own trees in the very early spring. We tapped our 3 trees (and they are not to big as far as birch trees go) and ended up with about 1 qt. of syrup. You have to be very careful when you boil it down as it can burn pretty easily when it starts to condense down.....it is aprox 100-1...so 100 qts of sap makes 1 qt of syrup.
