From what I undestand Belize does not generally get too cold in the winter months. If we had the opportunity to give this a try in January - we would take it up. The air temp was warm and humid and the water felt chilly at first, but we got used to it quickly. I am warm blooded so never got cold, but those who tend to chill easily will be affected by the cool water temps after a while. staylor, the Belize cave tubing is more of a gentle float with some minor rapids here and there. River conditions, however, vary widely depending on recent rainfall. Scenery includes jungle and caves (along with all the cave formations--stalagtites, etc.) It is dark in the caves and you are given a minor's light to see. Without the lights, it is pitch black in places. Kind of creepy, yet cool. We loved caved tubing and Belize--it was a true adventure.
