She got a printed list of ingredients. Quantities were missing, so there will probably have to be some experimentation. She was also informed that the smallest unit they use is a gallon! The first one is similar to mine, except I didn't use cream cheese or mayonnaise. I know I used fresh spinach, artichoke hearts, cream, and jack cheese. Pine nuts are an optional item, but good. Maybe some of these will be what you are looking for. I had this on the Majesty and it was fine, but no better than anywhere else, really. My sister makes it with a box of thawed/drained chopped spinach, sour cream, cream cheese, parmesan cheese and canned artichokes. Mix it all up. Serve with chips. FABULOUS. I have two of the cookbooks and it is not in either of them. :( EDIT: It was always called Spinach/Sweet potato dip before. Now I looked on a menu and it is just called Spinach Dip. ?? My opinion:) Hot Spinach Cheese Dip 1 can 13.75 oz. quartered artichokes hearts, rinsed and drained 2 green onions, chopped 1 garlic clove, minced 1 T. butter or vegetable oil 1 bunch fresh spinach, rinsed, trimmed, drained and chopped. 1 1/2 T. flour 3/4 C. whipping cream 1 1/2 C. shredded Monterey Jack cheese 1/4 C. grated Parmesan Cheese 1 T. pine nuts (optional) Salt and pepper to taste Tortilla chips In a large skillet, saute artichoke hearts, green onions, and garlic in melted butter, stirring often, 2 to 3 minutes, until onions are limp. Add spinach and continue cooking 1 minute, until cooked down. Stir in flour and cook, stirring 1 to 2 minutes. Gradually stir in cream and heat until mixture boils and is slightly thickened. Stir in Jack cheese, Parmesan cheese and pine nuts. Heat just until cheese is melted. Do not boil. Season to taste with salt and pepper. I have tried the Spinach Artichoke Dip at various restaurants, including the MDRs on Vision and Mariner, and while they are all good, I think this recipe is the best. Artichoke and Spinach Dip 1 teaspoon extra virgin olive oil 1 medium yellow onion, diced 3 cloves garlic, chopped 12 ounces baby spinach, shredded 1 cup ricotta cheese 1 - 8 ounce package cream cheese, softened 14 ounces thawed, frozen artichoke hearts, chopped salt and freshly ground white pepper 1 cup cheddar cheese Preheat oven to 350. For the dip, in a saucepan over medium heat, warm oil and saute onion and garlic for 4 minutes. Do not brown! Add baby spinach and saute for 2 minutes. Remove from heat and stir in ricotta and cream cheese. Mix Well. Add artichokes and season with salt and pepper. Divide mixture equally into oven-proof serving ramekins.
