Hi

I want to take my dad on a cruise for his birthday and wanted advise on line and ship?

We don't drink and are looking for relaxing activities with good shows, comedies and other activities

I'd suggest Carnival for the nightly comedy.

You might find the options limited with poor cabin choices. Many of us book at least 6 months out -- I often book over a year out. You might find some availability the first 2 weeks in December, but unlikely over Christmas or New Years (and prices are just about double then anyway). You also might find dining time choices are not to your liking -- probably only late dining is available now, but you can check -- I know often the early and anytime dining times fill up first. Are you looking for a 7-day, or one the 4 or 5 day? The 7-day Royal Caribbean Liberty of the Seas is very nice.

It would not be too soon to think about this for December, 2018 instead or in addition. Maybe you can have other family join too.
