Ship Taxes and Onboard Shops While Docked

We have never been on a Bermuda cruise.

 

When the ship is parked at the dock for a couple of days, does the ship close their shops and casino until they are back at sea? Is alcohol ordered from the bar taxed while in port?

No tax on alcohol.

Stores closed until you leave.

Casino is dependent on the ship. Casinos can purchase a license to open between 9pm and 5am while docked, but it is per ship. Assume that if you are on a ship that is doing regular trips, they will probably get the license. If its a one off, probably not.
