One elegant night and it's the 2nd or 3rd night of your cruise per Carnival's website.

Cruise Elegant Evenings / Formal Nights

The length of the cruise determines the number of 'Cruise Elegant' evenings in the Dining Room. The first 'CruiseElegant' evening is scheduled for the 2nd or 3rd evening of the cruise and the second 'Cruise Elegant' evening is scheduled for the 2nd or 3rd evening prior to the end of the cruise, schedules permitting.

  • 2-day to 5-day cruise: one CruiseElegant evening
  • 6-day or longer cruise: two CruiseElegant evenings

That is Carnival's dress code for elegant night in the MDR, so it is pretty easy to comply. You can find the cruise casual MDR dress code also under facts. The rest of the ship is 100% casual 24/7.
