You book it the same way that you would book dinner. Upon embarkation you will receive the Navigator for the day (listing of all the events happening on the ship for that day) it will tell you where to go to sign up for Palos. DO THIS FIRST... do not wait since times will fill up. You do not have to do one or the other... you can sign up for dinner (multiple nights if wanted) as well as brunch.
