you serve yourself unless there is a reason to worry about something like noro. If there has been any outbreak on the ship or the previously sailing the staff will dish up your food.

It is self serve in most areas, but there are some specific areas where items are prepared and served for you, such as carving stations, pasta, eggs, ice cream rev.

Mostly self serve other than carving stations and such.
