Sorry if this has been asked before but...any idea when Princess will release next years summer Caribbean schedule?

If you contact your TA, they've had all of the information on ships and itineraries for over a week.

Summer 2015 Europe has been out (circulating but not bookable) for a month now. Caribbean Princess will be back in Southampton then after temporarily spending this summer at Port Everglades. And with second Super-Grand class ship headed for Alaska that leaves no ship available for the Caribbean next summer. Sorry to be the bearer of bad news.

Unfortunately, I think so. If you flip through the Princess website, the only ships not already publicly scheduled for Summer 2015 are the Sapphire and the Sun (both of which have been sailing in Asia). We, too, had been hoping to sail Princess in the Caribbean next summer.
