You can apparently do that or just wait as before and have them billed to your shipboard account. I don't remember that being there in January on our last cruise. We have one excursion booked for our cruise next week, but I don't like to actually pay for it until I know I don't want to cancel, or Princess cancels. Sometimes it is the weather. There have been times we missed a port. Sometimes you may not feeling up to what you thought you would do at home. Like when I got Montezuma's Revenge in Cozumel once! I have many times decided to book something once I am on the ship too. I would rather just wait until after the cruise to get the charges of what I finally did. Women like to change their minds. Hopefully this is not steering towards making you prepay all the time like some other cruise lines. Better me making interest on my money than them.
