Specialty Restaurant reservations

We are booked on Harmony April 7th, and wife would like to eat at Izumi one night. Looks like everything is booked unless you want to eat at 5 or 9. Do any of the spots that are around 7 or 8 ever open up? Is it possible to book these on the ship??
