You have to open them a certain way, but they do not lock them. That would be a huge safety issue should they need to evacuate the ship quickly.

It would be a SOLAS violation for these doors to be locked.  You (and the many others) pulling on multiple doors until you found one unlocked should have reported the situation to staff so that I could be rectified.
