When we were their, we were seated on very old broken plastic chairs- poor wait staff service and the menu choices weren't nearly as varied at Mr. Sanchos.  The pool was small and dirty.  Yes less people, but many less facilities and options. We travel as two adults and sometimes with family.  Overall, Mr. Sanchos IMO a much better choice.

Hmmmm? 😕 Been to Nachi Cocom several times, as well as a couple of visits to Sanchos.  Always had great service, food and drinks at Nachi in a quiet, uncrowded setting.  Small pool with swim up bar plus a small hot tub (that's never very hot).

Sanchos has water toys and a more lively atmosphere, so my daughters love the place - but the loungers are stacked next to each other on the beach and IMHO the food and drinks are not as good as what you get at Nachi.

On our last visit we went to Paradise Beach with friends (who did not want AI) and were very ipressed with the food, drinks and service (the taco truck was great!) - plus they have water toys, HUGE pool, etc.  If you want a non-AI option it should be at the top of your list.
