Dining Package Supplement

What exactly does this mean? There seems to be no rhyme or reason where they choose to do this. Example: There is a $5  dining supplement on an appetizer costing $14 yet there is none on a $12 appetizer. It would make sense to me if the supplement was $2. Can anyone explain how they decide what and how much a supplement will be?

There really is no point trying to work out the logic of this stuff, there are many similar things which don't make much logical sense.

It is based on maximizing revenue considering the margin on each dish and the likelihood of getting people to pay the upcharge. There is also the idea to discourage "everyone" on a dining plan from picking those items which have a lower margin. 

 

So,,,, there is a high probability that the average diner would place a higher value on a Tiger Prawns appetizer and be willing to pay a premium over a plain ole shrimp cocktail. The average diner would probably not place a similar value on a piece of bacon or mashed up raw fish leftovers from the sushi bar. 

 

If you make is sound fancy, and put a premium on it, then people will physiologically want it and you get an extra $5.20 in your pocket.
