Unlimited Dining Package Question and a CocoCay Question

We purchased an unlimited dining package for a four night cruise.  After the purchase has been completed do we then go online and make dining reservations at each restaurant?

We decided last night to book a cruise during the Christmas holidays.  All cabanas are booked for the day at CocoCay.  Is there a chance that a cabana can open up before our cruise?  I called RCCL and was told no waitlist is available, so I have to continually check to inquire if a cabana opens up?  We have been on CocoCay a few times now, but always in a cabana, so not familiar with other seating options.  We are two older adults, so should we remain on the cruise ship for the day?  Any suggestions are appreciated.

You will be assigned a specialty restaurant reservation for the first night. You can stop at any restaurant to change that reservation and make reservations for the rest of the cruise as well. You can not make them ahead of time.

Your best bet will be to keep checking to see if a cabana opens up. Good luck!
