Caribbean Princess Embarkation Day Specialty Restaurant Lunch Options

On the Caribbean Princess, I was wondering if any of the Specialty Restaurants were open for lunch, or if the Main Dining room is open for lunch?  What about Sea Days lunch at Specialty Restaurants?  Thanks.

MDR is open for lunch from 12:00 to 1:30 on embarkation day.  It will also be open on sea days (longer hours).  Also, if it's a late port day (e.g. 12:00 or later) it "might" be open.  The specialty restaurants won't be open for lunch.

I wish Princess would have a lunch menu in the specialty restaurants. Sabatini's used to serve a seafood buffet brunch. I haven't seen that since 2003. The Pinnacle Grill on Holland America serves a great lunch at a reasonable price.
