Pride of America - booster seats

I'm a first time cruiser and will be bringing my 5 and 7 year olds with me. I'm trying to figure out how to handle their booster seats at all the various ports. We will be using a mix of public transport, and will likely also book an excursion or two through NCL. If I take their booster seats for them to use in the vehicle on the way to the activity, it seems I would then have to hang on to the seats for the duration of the sight seeing and that doesn't sound very fun. I am not sure what my options are here - has anyone done this, and can you give me advice? Thank you!

Were the kids required to show birth certificate to board?

My wife and I are already in hawaii a few days out from boarding the cruise and we dont have our sons birth certificate as we didnt think we needed it because its a US based cruise.

If you can please respond ASAP to give me piece of mind. Thank you

My understanding is that you don’t need it. I’m still a couple of weeks from boarding myself so I haven’t dealt with that just yet, hopefully someone who knows for sure can enlighten us both!
