Purchased and used  $250 off NCL cruise on MyVegas last month. Nice! Can I now purchase and use $500 off? Or do I have to wait some period of time?  Thanks.

Some rewards have wait limits and some do not. Call the NCL Casino and they can help. Also read the print on the reward you want to purchase. I am pretty sure this is a premium reward and there are specific rules that apply.
