BANANA & CRUNCHY NUT PARFAIT - FROM RCI SAVOUR COOK BOOK CROQUANT: 3/4 cup macadamia nuts 1/2 cup sugar 2 tablespoons water 1 teaspoon vegetable oil CARAMEL SAUCE: 1 cup sugar 1/3 cup water 1/2 tablespoon unsalted butter 1/2 cup vanilla ice cream PARFAIT: 4 eggs 6 egg yolks 1 cup sugar 2 cups heavy cream GARNISH - chocolate sauce, purchased Preheat oven to 375 F For croquant, place nuts on a sheet pan and toast until lightly browned. Mix sugar and water in a small pan and simmer until golden brown. Add nuts and stir to coat. Grease a baking sheet and pour caramel and nuts onto it, allow mixture to cool. For the parfait, using an electric mixer, whisk eggs, egg yolks and 3/4 cup sugar togather until doubled in volume. In another bowl use an electric mixer beat cream and remaining sugar until soft peaks form. Gently fold the mixtures together. Crush the caramel-nut croquant and stir into the mixture. Pour into parchment paper-lined terraine mold. place in freezer for at least 3 hours. For caramel sauce, melt sugar and water in a small saucepan over a medium heat and simmer until golden brown. Remove from heat, add butter and slowly mix in ice cream. Remove parfait from the mold by warming sides under running water. Slice parfait and serve on chilled plates.
