Try a google search for 'tuscany taste tours' (combine words and remove spaces). They have tours into the home of the 'Super Tuscan' wines.

From Livorno we had a wonderful tour called "Cooking at the Castle"! We drove through the beautiful Tuscany countryside to a Renaissance castle high on a hill. We toured the castle and then descended into the kitchen for our cooking lesson (in Italian, but olive oil or olio d'olivo is pretty much the same!) While the food was cooking we had a tasting of the castle's own wines, and then sat down in the magnificent dining room to eat our own cooking! It was a great tour!

We used John from http://www.romeinlimo.com and had one of the best days of our cruise. We were met at the ship, taken for a tour to Pisa, San Gimignano and then for a spectacular wine tasting near San Gimignano. Outstanding food, wonderful wine. You won;t be disappointed. You can even order the wine to be sent home. We enjoyed a bottle with our Christmas dinner. Jany, who handles the bookings is wonderful to deal with, very prompt and professional. We've already booked them for our stop in Livorno this year.
