You can book them about 45 days out. I think you get an email from NCL when booking opens, but it's worth starting to check online after mid Oct.

 

There is no panic though. Unless you are very specific about your times then you can leave it until nearer the time, or book on board.

When we sailed DH and I were a panic about it. For us reservations started at 9am (central) 45 days out (there were 12 of us). We started calling at 5am. We were able to get everything we wanted. Turns out you don't have to be on the phone the minute they open. :) (our first cruise)

 

On embankment day as we walked by the theater we over heard a woman asking about Cirque reservations and being told they were already booked for the entire cruise.

 

If there is something you really want to do or eat book it in advance so you are not disappointed.

 

But it's a cruise - so relax.
