Does anyone have HAL's recipe for bran muffins? Also looking for their Farmer's Vegetable Puree recipe if anyone happens to have it. Thanks!

Here is the recipe for the soup but you will need to use your calculator. I am still looking for the muffins.

Ingredients

1 portion

 

Product Specs

Vegetable Stock 5 gallons

 

Vegetables: 8 pounds total of the following

Leeks, chopped

Carrots, chopped

Zucchini, chopped

Cauliflower, chopped

Broccoli, chopped

Potatoes, chopped

 

Garlic, chopped fine 1 ounce

Onions, chopped fine 8 ounces

Heavy Cream ¾ gallon

Carrots, brunoise and blanched 12 oz

Salt and Pepper

Marjoram Seasoning

Sun Dried Tomato Croutons 100 each

 

FOR SERVICE:

1. Sauté the onions, garlic and leek in butter.

2. Add the vegetables stock (could use chicken stock) and all the chopped vegetables. Boil until everything is over cooked and falling apart.

3. Puree and add Heavy cream and bring back to the boil.

4. Season with salt, black pepper and marjoram seasoning

5. Serve with sun dried tomato crouton

Crew News, what a MAJOR coincidence! I spent some time searching for Alaska info this morning, and spent about an hour engrossed in the 2011 report from the trip you and IRL_Joanie did on the Zuiderdam. When I was reading it, I was wondering what had happened to all those recipes you had been given. And now voila! You still have them ....

Thank you so much Crew News! I have a great program that stores my recipe and automatically converts to a selected serving size! This will be on our menu this week to help combat the post cruise blues!

I've asked for the bran muffin recipe and I got it. One of the ingredients is the bran muffin mix that you can buy in bulk!
