Southampton to London to Paris

I'm afraid that's not correct. There are luggage racks for large suitcases near the entrance doors to the cars.

 

As I noted above, we did the reverse of the OP's planned trip, Paris to London (via Eurostar) to Southampton. We each had a large suitcase and a carryon.

If you can, go with the higher class of service on the Eurostar. It really was a nice experience. And, you do have to schlep your bags onboard the train yourself. There are luggage areas but there isn't a whole lot of room. We had 4 big bags (family of 4) and we managed to do it before the train took off. Don't be afraid to ask for help if you can't find your train track. It can be a bit confusing with all the trains coming and going (especially in France!).
