Yes they will have playoff games on, the team you want to watch that is not guaranteed .

I was on the Gem last year during NFL playoffs and the games were on the big screen in the Atrium. We went to O'Sheehans early and got a table at the railing and watched the games enjoying wings and beer. :D

You might want to ask NCL, since regular season games are on, but this year there was no World Series on the Gem because they had to pay an additional fee to show it and they did not. Some upset Cubs and Tribe fans on the 10/30/16 cruise.
